About Wray & Nephew Overproof rum

  • Alc./Vol. : 63%
  • Origin : Jamaica
  • Notes : ripe banana, molasses, spice, demerara, a little oak

Wray & Nephew is made by Appleton Estate whose master blender is Joy Spence. It is the best-selling rum on the island and synonymous with Jamaica overproof rum. It is also the only one of the three main overproof brands that is made by blending rums that are distilled in both pot and column stills. As it produces fewer esters*, it isn't quite as aggressive as the other two main overproof brands.

*Esters form when acid combines with alcohol and are the key to white rums from the island of Jamaica.

I absolutely love this cake. I was lucky enough to help Elaine with the taste testing process before she launched. And I can now say she has the recipe spot on. It’s rich, decedent and goes perfectly with my morning coffee 🙂

Lovely cake that taste just as good with a cup of coffee as it does as a dessert smothered in custard! Perfect for the long winter nights – it tastes like a warm hug! Clearly made to a recipe that’s had a lot of love over the years,
