Once the cake is removed from its home compostable packaging and it is stored at room temperature in an airtight container, it will keep for months.

This cake comes whole and can be cut into 6 generous 100g slices or 12 50g taster pieces.
For best results, cut carefully with a serrated knife.
About Wray & Nephew Overproof rum

Wray & Nephew is made by Appleton Estate whose master blender is Joy Spence. It is the best-selling rum on the island and synonymous with Jamaica overproof rum. It is also the only one of the three main overproof brands that is made by blending rums that are distilled in both pot and column stills. As it produces fewer esters*, it isn't quite as aggressive as the other two main overproof brands.
*Esters form when acid combines with alcohol and are the key to white rums from the island of Jamaica.
